What sort of disk format (such as FAT32 or NTFS) is used on the flash
memory that is in an MP3 player which records?

None use NTFS. Maybe if MS had the feature they'd use it,
but nobody else wants to pay license fees, if MS were to
want to license it for MP3 players at all.

FAT (FAT16) is typical. Newer players must support FAT32 if
they can access 2GB flash card partition else they'd have
to use something proprietary. The answer then is that you
should expect FAT as the default and FAT32 on any device
with the enhanced ability to write to 2GB cards (even if
it were due to another player in that series/family, if/when
the particular unit under consideration didn't have over 2GB
embedded in it, or merely due to the features sets of a
newer chip, I'd expect any newer designs to support FAT32).
