Default best way of copying hard drive to SSD?

Suppose I wish to replace a 500 GB hard disk with a 500 GB SSD.
Should I use the manufacturers data migration software, or can
I just use a workhorse like Clonezilla or Acronis?

Acronis is fine and provides more flexibility if you want to
change the partitioning etc too at the same time as the copy.

By "change the partitioning" do you mean "re-arrange the
relative positions and sizes of partitions when cloning an entire
drive"? In the past, I've just cloned individual partitions using
Casper and told it to put the contents into any partition that could
accommodate the size of the actual data in the cloned partition.

Yes. In some situations some want to do stuff like that as well.

You have a lot more capability with Acronis in that regard.
