I've spent a long, long time going back and forth between these
menus... and I can't find a way to reset the OpenGL settings. Any
ideas?

The only way I know is in Performance and quality - Global driver settings -
Restore.
This restores the default settings for DirectX and OpenGL.
However, if you have created custom profiles for any games in Performance
and Quality settings, then they would need to be deleted so they would use
the default settings...
