Default what options for printing saddle "stitched" booklets?

I've been printing small booklets on 8.5" x 11" paper, folded in half

Is your question re. how to print a "signature"
with the pages in the right order, or where to
find a small folder/stitcher?

My brother is a binder. His machines fold first
to form the signature which then sits on the
"saddle" for stitching (stapling). Hence the
name "saddle stitching".

I've seen Swingline staplers that had a very
long "throat" such that you could staple the
middle of letter-size signatures and then fold.
